Apr 11 2008 3: 15PM HP LASERJET FAX <br /> p. 2 <br /> LF ��nJc^ Ycu FL 7 <br /> �I',{ <br /> 04"L5 p <br /> dol <br /> Donuts and Yogurts <br /> 1988 West I Vh Street <br /> Tracy, Ca 95376 <br /> 562-640-1449 <br /> Tony Chau (Operator) April 10, 2008 <br /> Attention: Johnny Yoakum (EHD) San Joaquin County, <br /> I am writing to you today in regards to our plan submittal for approval to relocate <br /> all and current existing equipment to our new location at 1984 west 11°i street, <br /> Tracy,Ca 95376 which will he two stores down. <br /> I recently had a discussion with the City of Tracy Building Department supervisor. <br /> He stated to my contractor that we fell under the 750 gallon size grease interceptor. <br /> Considering that we are a small donut shop that uses very little water,we do not <br /> prep food or any raw items and we use our three compartment sink for washing and <br /> rinsing our donut trays. This size grease trap is to an industrial level and far <br /> exceeds what we require for our location based on what we have. <br /> 2007 plumbing code states that with 8 fixtures you are allowed a 500 gallon trap <br /> and anything above that would require a 750 gallon tank. Our new location will <br /> have 2 small hand sinks, 1 mop sink, 1 floor sink, 1 floor drain, 1 bathroom sink, <br /> three compartment sink which ,you had communicated that we needed since 2 comp <br /> sinks are not allowed anymore. Since the hand sinks and bathroom sink will not be <br /> connected to the grease trap, that gives us a total of 11 fixtures which means we are <br /> only 2 over what is required for the 500 gallon. <br /> Johnny,we did not anticipate a lot of these upgrades to meet the new and current <br /> codes and regulations and for that I sincerely apologize. We still have to comply <br /> with all ADA regulations for the location which means we will be spending approx. <br /> 58,000.00 on upgrades for the bathroom. We are $30,000.00 over budget with very <br /> little assistance from the landlord. Our out of pocket is now exceeding 565,000.00 if <br /> we have to put in a 750 gallon grease interceptor. With all the water running, there <br /> is no way we will exceed 750 gallons of water per minute,we do not have the <br /> pressure or equipment for that. We are a small shop with very tittle need for water <br /> besides for safety and sanitation. <br /> If you could please review the plan and see if there would be any exception to <br /> allowing us to put in a smaller grease trap, that would be greatly appreciated. <br /> When I spoke with the supervisor for the building department, he stated that if we <br /> get a written letter from EIID that would allow us to put in a smaller grease trap, <br /> that they would be okay with it since they have already reviewed our plan and noted <br />
