Smith: <br /> This letter will indicate Health Department approval of drawings submitted for the <br /> proposed "Scooters" subject to the following conditions: <br /> 1. The floor surfaces in all areas in which food is prepared, packaged, open food <br /> storage, utensil washing areas, refuse storage, janitorial areas, and all restrooms <br /> and employee change areas shall be smooth and of durable construction and non- <br /> absorbent material which is easily cleaned. These floor surfaces shall be coved at <br /> the juncture at the floor and wall with a 3/8-inch minimum radius coving and shall <br /> extend up the wall at least 4 inches. Rubber or vinyl top set base is not permitted in <br /> these areas. CURFFL 114150 <br /> 2. Install grease traps/interceptors as directed by local building ordinances. Unit <br /> should be located outdoors for ease of cleaning, pumping and servicing. CURFFL <br /> 114100 <br /> 3. Must provide an adequate supply of hot water to meet the peak demands of all <br /> fixtures utilizing hot water. The gas water heater shall be a minimum size of <br /> 120,000 BTU. CURFFL 114095 <br /> You must keep this office informed of the construction progress. An inspection must be <br /> scheduled at least 48 hours in advance when the facility is ready to open with all <br /> equipment installed and thorough cleaning completed. A fee of $89.00 per hour may <br /> be accessed for any additional inspections, re-inspections or consultations. <br /> Any item(s) inadvertently overlooked in the plan check process, which is not in <br /> compliance with applicable County Codes and/or State Laws, shall be constructed or <br /> reconstructed upon request of the Environmental Health Department. Inferior <br /> workmanship, equipment, or materials will not be accepted for the construction or <br /> operation of a food facility.
