Two flour tortilla grilled on griddle to 141 F <br /> 2. Chicken enchilada from stream table ranging from 129 to 132 F ladled onto tortilla then rolled <br /> 3. Hot sauce from steam table added 126 F <br /> 4. Shredded cheese from 2D cooler/prep table 48 F topped roll-up <br /> 5. microwaved for 45 seconds to 138 F <br /> 6. Refried beans from steam table 125 F (subsequently retested, ranging from 108 to 132 F)added to plate <br /> Interviewed manager: <br /> 1. Manager stated not aware of incident nor similar incidents <br /> 2. Manager stated not aware of any employee called in sick, nor anyone out of country recently <br /> 3. Manager stated not aware of any employee's family members been sick except manager's,though manager is not sick. <br /> 4. Employee do eat food prepared at the facility <br /> Observed some of the equipment falling to provide provide temperature control and sanitizing steps.
