Immediately provide 41 F and below for all cold PHF. Observed PHF <br /> above 50 F disposed by staff. (113996, 113998, <br /> 114037, 114343(a)) <br /> #8 Use of Time as a Public Health Control MAJOR <br /> OBSERVATIONS:PHF in prep table reach-in by griddle had date stamp (7/26/2017)on the container but no"initial time"; <br /> staff stated PHF were placed out at around 6 am, except the sliced cheese which had been there since yesterday. PHF that <br /> uses time control only requires an"initial time"on containers (or a time log)from the moment when it is no longer <br /> temperature controlled, and the PHF must be disposed within 4 hours of that initial time.
