Round Table Pizza I
! H & H Enterprises
September 14, 1994 i 4
Several weeks ago, I visited the West Benjamin Holt Round Table. I attempted
to prepare a salad at the salad bar, but the bowl of lettuce was empty.
I notified an employee working at the bar, and several minutes later, another
employee came from the back holding a dripping wet head of iceberg lettuce.
This employee carried the lettuce to the salad bar and proceeded to tear it
! up, using his bare hands. I was amazed at this action, which he must have 4
realized by my expression. He then said "don't worry, I washed my hands". i
' Incidentally, this employee was pretty scruffy looking; long hair without
hair covering, unshaven, (grunge look), and a dirty uniform.
was .f.rustrated-f;r-om having,to- wait- anwexcessive amount -of—time to p1ck up.
and pay for my pizza, while the manager, Yancy,-=-stood`a-roundfolding° boxes,
so I did not address the issue at that time. I just wanted to get out of the
place.
After thinking about this incident for several days, and discussing it with
+ friends, I decided to call Yancy and let him know about the incident. He
{ appeared very nonplused about my observation. He indicated that it was
normal practice to touch food with bare hands. He said no one used gloves
T when preparing pizza. I told him that pizza wasn't as critical as cold food, ,
since pizza is heated to a temperature above 140 degrees, which kills most k
food borne organisms. Yancy seemed to be oblivious to the concept of safe
food handling and food borne illness.
Quite honestly, I don't know why I am going to such lengths to let you know F
about this. I've been eating at your Mound Table for years, maybe that is
why I am so concerned. It seems as if you are setting yourselves up for a
reported case of food poisoning or, something even more serious, a Hepatitis
A outbreak. Many food service operations have felt serious financial loss due
to the press reporting these outbreaks. It only takes one sick employee
touching lettuce to transmit the virus to all your customers! G
I
I
t
SEP 19
LJ
i
i
I
