All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #5 Hands Clean/Properly Washed/Proper Glove Use <br />OBSERVATIONS: Greasy cloths on prep table used for wiping hands between food prep. Wash hands instead of wiping <br />grease off on these cloths immediately. <br />CALCODE DESCRIPTION: Employees are required to wash their hands: before beginning work before handling food / equipment / <br />utensils as often as necessary, during food preparation, to remove soil and contamination when switching from working with raw to ready <br />to eat foods, after touching body parts after using toilet room or any time when contamination may occur. (113952, 113953.3, 113953.4, <br />113961, 113968, 113973 (b-f)) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Multiple mice droppings on shelves in dry storage room, back room, and wooden panel next to CO2 <br />cylinders. Remove droppings and provide more pest control including eliminating access and nesting opportunities. This is <br />a repeat violation. <br />Multiple flies in kitchen, ordering windows open. Remove flies, eliminate access by closing windows or installing screens, <br />and provide most pest control. This is a repeat violation. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Two cloths (either for wiping tables or wiping hands). Store in 100 ppm chlorine. Also see above <br />violation #5 on hand washing. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
