All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Unable to review food handler's cards. Provide by reinspection, or provide within 30 days of any new <br />hire who has not obtained food handler's card yet. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: 97 F at 2-comp hand wash sink, restrooms, and 98 F at 3-comp and prep sink. Immediately provide 100 <br />to 108 F to all hand wash sinks and at least 120 F at 3-comp, prep, and mop sink. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Dead mouse on glue traps and multiple mouse droppings in kitchen and dry storage, and flies in facility. <br />Immediately sanitize and remove carcass and droppings, eliminate attraction (food debris) and entry points, and provide <br />more pest control as needed; retain copy of pest control company invoices for review. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #30 Food Storage/Display Properly Labeled <br />OBSERVATIONS: 2 bags of onions on floor in backroom next to shelves. Immediately place at least 6 inches above floor. <br />This is a repeat violation. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
