Time In: 3:05 pm <br /> Time Out: 3:41 om <br /> Food Program Complaint Inspection Report <br /> Name of Facility: LA TAPATIA MARKET Date: 12/10/2018 <br /> Address: 2606 E MAIN ST, STOCKTON 95205 <br /> Owner/Operator: ZEPEDA, RAFAEL&LORENA Telephone: (209)986-7469 <br /> Program Element: 1600-FOOD PROGRAM Complaint#: C00047869 <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT CONSUMED LENGUA TACOS AT THIS FACILITY ON 12/03/2018 AT 5:30 P.M.WITH A FRIEND. <br /> COMPLAINANT ALLEGES SHE HAS BEEN ILL SINCE THEN AND HAS NOT BEEN ABLE TO KEEP HER FOOD DOWN. <br /> COMPLAINANT STATES THAT HER FRIEND CONSUMED BEAN AND CHEESE TACO DID NOT GET SICK AND <br /> BELIEVES THIS IS CAUSED BY THE LENGUA. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> Lengua--steam table--147.00°F <br /> NOTES <br /> Spoke with Manager on duty. States all meat and food in kitchen mainly prepared in morning. Once cooks cook food it is <br /> frozen and refrigerated until further use. Manager did not state how long before being frozen or refrigerated. From here the <br /> Lengua is portioned and when needed it is allowed to defrost for 15-20 minutes before it is added to a container on the steam <br /> table containing juices and other pieces of lengua. Temperature taken and lengua is at 147F. From here it is used either for <br /> tacos or other dishes. Manager states that all cooks leave around 1 pm-2pm. No other lengua is prepared after the cooks <br /> leave their shifts. Manager states that he has no knowledge of complaint but owner might because owner handles all <br /> complaints.
