Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br /> OBSERVATIONS:No hot water in kitchen available for handwashing or warewashing. Immediately provide 100 to 108 F for <br /> hand washing, and 120 F or above for warewashing and cleaning. Facility is boiling water to meet that temperature <br /> requirement at time of this inspection, and is in the process of repairing or replacing the water heater. EHD recommends <br /> using an insulated container with water dispensing spout for handwashing, and a container below to catch the waste water <br /> generated before disposing to a sewage system. <br /> Facility will be inspected tomorrow. <br /> CALCODE DESCRIPTION:An adequate,protected,pressurized,potable supply of hot water and cold water shall be provided at all times. <br /> (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #40 Proper Use and Storage of Wiping Cloths <br /> OBSERVATIONS:2 wipe cloths not in sanitizer bucket, and sanitizer bucket at less than 100 ppm quat. Store wipe cloths <br /> in sanitizer bucket and provide 200ppm quat. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer.
