�A <br /> P#14r, <br /> i dDate: November 21, 2008 <br /> To: Jeff Carruesco, San Joaquin County Environmental Health Program <br /> Coordinator <br /> From: Bruce McKinnon, PacPizza, LLC Director of Business Operations <br /> Subject:WingStreet Buffalo Wings added to Pizza Hut <br /> Pizza Hut has a new menu layer that is expanding across the United States, with <br /> over 1600 units open to date, and another 2000+ in the works. This new branded <br /> menu layer is `WingStreet wings'. PacPizza, LLC (Franchise of Pizza Hut) plan to <br /> sell these buffalo wings in the following San Joaquin County location: <br /> 720 West 11th Street Tracy, CA 95376 <br /> The buffalo wings come in frozen, and are then fried and sauced. These wings <br /> will be offered to our guests to replace the baked buffalo wings we sell today. In <br /> order to cook these wings, we will need a few pieces of equipment in the back of <br /> house. This includes a standard freezer, shelving, an electric fryer and a Giles <br /> Ventless Hood. I've included a diagram and specifications of this equipment <br /> which make up a WingStreet station. I've also included the floor plan of our <br /> Tracy, CA Pizza Hut to show the kitchen setup before and after the installation of <br /> the WingStreet station. <br /> The Giles Ventless hood may be new to you, so we're taking this opportunity to <br /> introduce you to this equipment. Giles Ventless/Recirculating hoods are the only <br /> hoods listed with the ICC PMG listing program for compliance to the mechanical <br /> code (IMC, UMC), NFPA 96 fire code and EPA 202 test standards for capture of <br /> particulates. These UL 710B listed hoods are held to a much stricter testing <br /> standards then conventional hoods and meet or exceed every test as required by <br /> the listing. The fryer and hood is interlocked as required by code, this interlock <br /> inhibits fryer operation unless the hood and filters are fully operational. This hood <br /> includes an ansul system. <br />
