All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. No food prep on facility, no 3-comp sink, no warewashing. Water Heater: Rheem Ruud ES85-36-G rated 36kW <br />EHD has been informed that the City of Lodi Building Department will allow the commissary truck wash to go in without a <br />grease interceptor installed at this time, as the facility has a sand-oil separator at the truck wash. EHD also understands that <br />the City of Lodi will look at the sand/oil separator after one year and see if it’s working adequately. <br />As a condition for issuance of permit, the trucks when they return from the field, will go through the truck wash and dump the <br />on-board waste tank there, and then wash out the inside of the truck in the same location, and, if needed wash the outside too. <br />OK to issue permit after fee is paid.
