Provide a complete hand washing station with hot and cold water supplies, wall <br /> mounted fully enclosed single service hand towel dispenser, wall mounted liquid <br /> or powder hand soap dispenser immediately accessible from food preparation <br /> area. (Provide an approved waterproof material directly behind any backsplash a <br /> minimum of 12 inches in height and continuous to top of floor coving on all <br /> adjacent wall surfaces). <br /> 2. The floor surfaces in which food is stored and mop sink areas shall be smooth <br /> and of durable constructions and non-absorbent material which is easily cleaned. <br /> These floor surfaces shall be coved at the juncture at the floor and wall with a <br /> 3/8-inch minimum radius coving and shall extend up the wall at least 4 inches. <br /> Rubber or vinyl top set is not permitted in these areas. <br /> 3. Walls and ceiling of all rooms (except for bar areas, areas where food is stored <br /> in unopened containers, dining areas, and offices) shall be of a durable, smooth, <br /> nonabsorbent, light colored, and washable surface. The walls behind and <br /> adjacent to sinks and dish tables should be covered with durable waterproof <br /> material that extends from the top of the coved base to 12 inches above the back <br /> splash. <br />
