The water heater must be able to recover at least 85 gph at a 60°F rise <br /> based on the number of fixtures in the facility. The water heater must also <br /> be a commercial model. <br /> 2. The icemaker, 3-compartment sink, prep sink, ice bins, and refrigeration <br /> units which discharge liquid waste shall be disposed by an indirect <br /> connection through an air gap into a floor sink. All floor sinks shall be <br /> readily cleaned and accessible for inspection. <br /> 3. Ceiling tiles throughout the kitchen, bar, janitor sink area, or any other <br /> food preparation area shall washable and impervious to water. Vinyl <br /> ceiling T-bar tiles shall be used and not acoustical ceiling. <br /> 4. The floor in the restroom and throughout kitchen prep and storage areas <br /> shall be ceramic or quarry tile with a continuous cove baseboard of the <br /> same material that extends up the wall a minimum of 4 inches. <br /> 5. Provide a physical barrier between the three-compartment sink and the <br /> hand wash sink to prevent cross-contamination of utensils or food items. <br /> 6. Provide this Department with the following items prior to beginning <br /> construction: 1. Cross section drawing of the sneeze guard. 2. Fill out <br /> the two-page hood data sheet that was faxed to you on June 8th, 2004, <br /> and return it to this Department for evaluation. <br />
