Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Food Handler Cards and Food Safety Certificate not on site. Maintain copies on site and accessible. <br /> Owner states they were all e-mailed last year. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br /> OBSERVATIONS:The dish machine has no sanitizer at the final rinse(ran 3 times 0 ppm Cl/0 ppm Cl/0 ppm CI). <br /> Per operator,the dishes are cleaned in the 3 comp sink using the wash-rinse-sanitize procedure and then run through the <br /> dish machine. Be sure that the sanitizer has a 1 minute contact time. <br /> Continue using the wash-rinse-sanitize-air dry procedure until the dish machine is restored to proper function. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized. Correct today. <br /> There is some uncovered food in the walk-in freezer. Maintain food covered or containerized. Correct today. <br /> The bulk ingredient bins have bowls.
