Corrected on site. <br /> There is no hand wash station at the kitchen or bar. Provide in 2 weeks. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. (113953, 113953.1, 114067(0) <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:The 2 dr prep cooler in the kitchen is at 49 F. Adjust to 41 F or below today. <br /> Facility serves beans and meats obtained from Hacienda Sahuayo. They are not kept on a hot hold. The temp of the beans <br /> were 98 F and the meats are at 140 F. Employee states they were received an hr ago. Items placed on the griddle to keep <br /> warm. Keep hot foods at 135 F or discard after 4 hrs from the cook time and keep a log. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #13 Food Contamination and Adulteration <br /> OBSERVATIONS:The prep sink is not hooked up. There is no water and no drain pipe. Provide hot and cold water and an <br /> indirect connection. Correct in 2 days. <br /> CALCODE DESCRIPTION:Any food is adulterated if it bears or contains any poisonous or deleterious substance that may render it <br /> impure or injurious to health.
