Only sell foods that are from a permitted facility. <br /> Owner wants to make tamales at their bakery(Tienda Guatemala on 2825 E Main St). The bakery does not have a hood. <br /> Owner states she will purchase the cooked fillings from a permitted facility and make them at the bakery. The boiling or <br /> steaming of tamales is ok to be done at the bakery. <br /> Owner also wants to sell the tamales at the store. Provide the manufacturer's name, manufacturer's address, and <br /> ingredient list when selling tamales in a customer self service area. Ensure the tamales are at 135 F or higher and held in <br /> approved hot holds. <br /> CALCODE DESCRIPTION:All food shall be obtained from an approved source.
