CRFC 114047 Adequate and suitable storage space must be provided for dry and cold <br /> storage. The following recommended methods may be used: a) A floor area equivalent to <br /> 25% of all kitchen space: b) Sufficient approved shelving of 96 linear feet of shelving that is <br /> 18 inches deep. <br /> 2. CRFC 114193, 114193.1 Ice machines and bins, food preparation sinks, warewashing <br /> sinks, display cases and refrigeration units, and any other food service equipment which <br /> discharges liquid waste, shall be drained by means of indirect waste pipes discharged <br /> through an air gap into a floor sink or other approved waste receptor. All floor sinks are to <br /> be positioned to be readily cleanable, accessible for inspections, and must be flush with <br /> finished floor. <br /> 3. CRFC 114099 The 3-compartment sink shall have two integral metal drainboards. The <br /> sink compartments and drainage facilities shall be large enough to accommodate the <br /> largest equipment and utensils. <br /> 4. CRFC 114163 The food preparation sink shall have a minimum dimension of 18 inches by <br /> 18 inches in length and width and 12 inches in depth with an integral drainboard or <br /> adjacent table at least 18 inches by 18 inches in length and width. <br /> - 1 - <br />
