LETTER TO C & J COX CORPORATION <br /> PAGE 2 <br /> 5. All ice machines and bins, food preparation sinks, dishwashing <br /> sinks (dishwashing units) , display cases and refrigeration <br /> units and any other food service equipment which discharge <br /> liquid waste shall be disposed therein by an indirect <br /> connection through an air gap (Height of air gap must equal <br /> two times the inside diameter of the discharge tube. <br /> H=2xI.D. ) into a floor sink or other approved waste receptors. <br /> All floor sinks are to be positioned to be readily cleanable, <br /> accessible for inspections, and must be flush with finished <br /> floor. CURFFL 27625 & 27631 <br /> 6. Provide a complete hand washing station with hot and cold <br /> water supplies, wall mounted fully enclosed single service <br /> hand towel dispenser, wall mounted liquid or powder hand soap <br /> dispenser immediately accessible from food preparation area. <br /> ( Provide an approved waterproof material directly behind any <br /> backsplash a minimum of 12 inches in height continuous to top <br /> of floor coving on all adjacent wall surfaces. ) CURFFL <br /> 27627 & 27632 <br /> 7 . Provide a one (1) compartment, non-porous janitorial sink, <br /> slab, basin or floor constructed of concrete or equivalent <br /> material, curbed and sloped to a drain to be used exclusively <br /> for general cleaning purposes and for the disposal of mop <br /> bucket waste. Facilities must be located so as not to <br /> contaminate any food preparation areas, food storage areas, <br /> utensils or equipment. The mixing valve shall be equipped <br /> with a backflow prevention device. CURFFL 27623 & 27624 <br /> 8 . Where multi-service kitchen utensils are used, a minimum two <br /> compartment stainless steel sink with integral stainless steel <br /> drainboards shall be provided. The two compartment sink must <br /> have dual integral drain boards and must meet NSF or standards <br /> or equivalence. Where multi-service eating and drinking <br /> utensils (cups, plates) are washed by hand, a three <br /> compartment stainless steel sink with drainboards shall be <br /> provided. CURFFL 27623 <br /> 9. A food preparation sink will be required for this facility. <br /> The one compartment prep sink must be indirectly drained if <br /> used for food preparation by means of an indirect air gap to <br /> an approved liquid waste receptor. CURFFL 27625 <br /> You must keep this office informed of your construction progress <br /> and call for inspections (48 HOURS IN ADVANCE) when the facility is <br /> ready to open, all equipment installed and after thorough cleaning. <br />
