All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: Potentially Hazardous Food in Walk In and on salad bar above 41 F (see measurement list). Provide 41 <br />F or below for PHF. This is a repeat violation. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. Repair to seal gap and provide a cleanable and <br />non-absorbent surface in 2 weeks. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Chain to permanent structure in such way that will prevent cylinders from falling over in 1 day. The cylinders <br />outside Walk In were corrected on site, but the ones inside Walk In still have to be chained down. This is a repeat violation. <br />CALCODE DESCRIPTION: All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate from <br />food and food-contact surfaces. Store wipe cloths in sanitizer buckets <br />immediately. This is a repeat violation. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
