1 .2.6 Insulated Tanks
All wine tanks at Delicato have been insulated to reduce the cooling needs for maintaining the
proper temperature of the wine. Reducing the cooling demand of the wine reduces operation of
the cooling towers.
1.2.7 Institutional Processes
Best Management Practices— Delicato has developed BMPs for source control. BMPs that
have been initiated include chemical reduction and replacement, covering chemical storage
areas, posting for chemical identification, sweeping and precleaning of equipment prior to wash-
down, cleaning of equipment immediately after use, reuse of chemicals where possible, and
conducting regular chemical and water use audits. Delicato has also developed a water
conservation and source control task force that meets on a regular basis to discuss and
evaluate water use at the Facility. The task force identifies, evaluates, and implements
conservation opportunities at the Facility.
Standard Operating Procedures— Delicato incorporates source control measures that include
testing, maintenance and process water treatment operating procedures to integrate source
control in the winery routine operations. SOPs include general facility housekeeping, chemical
handling procedures, equipment cleaning and sanitation activities, and solid waste management
for items such as pomace and spent diatomaceous earth.
Employee Orientation and Training— Source control and water conservation is a part of the
employee orientation and training program so that Facility workers can understand the
importance of source control and water conservation as well as methods for implementation.
The program requires each employee to incorporate source control and water conservation into
their daily tasks. Source control and water conservation are also incorporated into new
employee orientation.
Delicato Family Vineyards Exhibit 3.doc
11/21/2011
