This page will
outline our immediate plans of operations at the winery.
In the initial stage of our winery, our focus will be on production. It takes a new winery a
certain period of time to produce enough wine, as bottled and cased products, before much
business can be conducted, as well as tourism and public tastings. This for us is a while off, so
we will be concentrating on outfitting our buildings to be a functioning, and compliant winery.
From the period of March 2000 until July of 2001, a period of 16 months, we can outline
our Project Description Proposal. As stated above, this period will be dedicated to equipping our
winery, and making wine. We will not have a tasting room or area during this time,by virtue that
we will not have enough wine bottled to present. We may retail a slight amount of our earliest
wines, but this will be to licensed distributors and retailers.
During this period, our largest amount of bulk wine, to be stored in tanks and barrels, will
be 3000 gallons, of 12 different varieties of wine. The grapes will come from 2 vineyard
locations, both owned by the owners of this winery. One vineyard is located on Locust Tree
Road, between Kettleman Lane and Harney Lane. The other is located on the comer of
Simmerhom and Loll. These grapes will all be hand harvested into half ton picking bins, one ton
picking bins, or in small picking trays, and loaded onto a flat bed trailer pulled by a regular truck
(not a tractor trailer). These grapes will be driven back to the winery and fork lifted into the
receiving hopper, on the proposed crush pad on the Site Plan. After this point, the grapes will be
processed into wine, according to varietal.
During this time, Ave may have small meetings at the facility, to highlight winemaking, as
much as once a week and consisting of around 30 people for the largest meetings. Also, there
will be small private tours, and tastings from tanks and barrels, on the order of approximately 10
