The icemaker, 3-compartment sinks, prep sinks, refrigeration units, soda <br /> fountains, units which discharge liquid waste shall be disposed by an <br /> indirect connection through an air gap into a floor sink. All floor sinks <br /> shall be smooth and cleanable and be readily cleaned and accessible for <br /> inspection. <br /> 2. Ceiling tiles throughout the kitchen, janitors sink area, or any other food <br /> preparation areas shall be washable and impervious to water. Vinyl <br /> ceiling T-bar tiles or gloss enamel paint shall be used and not acoustical <br /> ceiling tiles. <br /> 3. The floor surfaces in all areas in which food is prepared, packaged, utensil <br /> washing areas, janitorial areas, restrooms, walk-in refrigerators, back <br /> store room, and open food storage shall be smooth and of durable <br /> construction which is easily cleaned. These floor surfaces shall be coved <br /> at the juncture at the floor and wall with a 3/8-inch minimum radius coving <br /> and shall extend up the wall at least 4 inches. Rubber or vinyl top set <br /> base, or wood baseboard, is not permitted in these areas. <br /> 4. The walk-in refrigeration units shall be lined with FRP Board over the <br /> existing plywood walls from the top of the the base to the ceiling. The <br /> ceiling can be painted with high gloss paint. <br /> 5. You must install a one-compartment sink in the deli if you are planning to <br /> wash vegetables for sandwich making practices. The sink must drain via <br /> indirect connection to a floor sink. If all ingredients for sandwiches are <br /> prepackaged and pre-sliced then a one-compartment prep sink will not be <br /> necessary. <br />
