WALK IN COOLER NOT VERY COLD, UNCOVERED MEAT IN WALK <br />IN. LARD STORED IN BUCKETS OUTSIDE UNCOVERED WITH FLIES /CRITTERS CRAWLING AROUND. SEE <br />ATTACHED EMAIL AND PICTURES. CALL BACK AFTER INSPECTION <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />Environmental Health Department <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />No Temperature Data Collected <br />FOOD ITEM -- LOCATION -- TEMP º F -- COMMENTS <br />NOTES <br />As per owner, he is not aware of the complaint. During my visit, I inspected the walk in cooler. Temp is at 41F, meat trays and <br />containers were covered and placed on shelves off the floor by 6 inches. The only container found uncovered is the onion <br />container. In the basement I observed the onions stored by the ladder on concrete shelf far away from where the rodent was <br />found. Rodent was disposed and as per owner they are doing pest control twice a month. Last pest control was done <br />06/28/18. I observed lard stored in closed plastic bags, placed in 3 containers at the back of the facility. Few flies observed on <br />plastic bags. The green hose is connected to a pump, pushing water from the big air conditioning unit( collected in big black <br />container) to the main sewer pipe. I couldn't verify any raw meat outside the cooler that could be covered by dirty wash cloth <br />as mentioned in the complaint. <br />Recommendations: Cover the lard containers with lid till disposed in the commissaryOwner possesses 3 taco trucks <br />connected to california st commissary. <br />Cover all food containers when placed in the walk in cooler. <br />Keep on pest control twice a month.
