Water heater shall be either 36,000 BTU/8 Kw if a large 3 comp sink is installed. If a small 3 comp is installed provide a <br /> 23,000/5 Kw unit. <br /> 2. Mop sink or basin will be required <br /> 3. Floors, walls, ceilings for rest room, smoothie prep station, ware washing room, mop sink/basin room, and dry storage room <br /> shall be smooth, cleanable, and non absorbent. Floors shall be up to code (see provided information)with coved base that has <br /> 3/8 inch radius. Base shall extend a minimum of 4 inches on wall. <br /> 4. Install wall mounted paper towel dispensers in rest room and smoothie prep hand sink. <br /> 5. Hot water shall be 120 F or higher <br /> 6. Provide soap from bottles or from wall dispensers <br /> 7. Rest room door shall be self closing <br /> 8. Obtain permit with the City of Stockton before starting to install sinks <br /> 9. All lights shall have covers or be shatter proof <br /> 10. Install a 3 comp sink with dual drain boards <br /> The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br /> Safety Code.
