G R A Architects Associates, Inc. California License No.: C22875
PO. Box 9082
Stockton, CA 95208-1082
Phone: (209) 609-6801
Email. GRA22875@gmad.com
February 12, 2019
Mrs. Maribel Flohrschutz, Senior REHS
Environmental Health Department
County of San Joaquin
1868 E. Hazelton Ave.
Stockton, CA 95205
RE: Center Stage BBQ & Grill Tenant Improvements
2210 Country Club Blvd.
Stockton, CA 95204
SUB: Commercial Kitchen Relocation
Mrs. Flohrschutz:
Due to the estimated cost of construction of the original plan submittal, the Applicant needed to
"value engineer"the project in order to move forward. One of the key items of cost they did not
expect, was the required installation of an exterior grease interceptor for a Commercial Kitchen
within the establishment. Thus, in order to eliminate the requirement by the City, the Tenant
explored other options. The Tenant has decided to move forward and resubmit under the
alternate design concept where the Commercial Kitchen is being relocated to a licensed Mobile
Food Truck(please see attachments)parked at the rear of the facility during business hours.
Thus, no Commercial Kitchen is proposed at the interior of the establishment at this time. The
room that was initially proposed to be the Kitchen will be a Food Holding room only.
We have received preliminary approval of this concept from the Stockton Planning, Building,
and Municipal Utilities Departments. We have resubmitted the drawings to them for their formal
review and approval. One of the conditions we know will be required by them is an updated
approval letter from your department.
Please feel free to contact me should you need any clarifications or information.
Sincerely,
George A. Rodriguez,AIA, LEED
GRA/bd
Architecture . Consulting
