Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:Some of the food temperatures are greater than 41 F(see temperatures at overall inspection notes). <br /> Maintain refrigeration units and cold food at 41 F or below. Maintain wiping cloths in a <br /> bucket with a sanitizing solution of 100 ppm Cl or 200 ppm Quat(minimum). <br /> Corrected on site to 400 ppm Quat <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3(d-e)) <br /> #45 Floors,Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:The kitchen and warewash area have some broken tiles and/or tiles with missing grout. Replace broken <br /> tiles or re-grout by 1 month. <br /> There are some missing coving tiles around the CO2 bulk tank. Replace missing coving tiles by 1 month. <br /> CALCODE DESCRIPTION:The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor <br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
