Discontinue practice today and <br /> thaw meats with the approved methods listed below.The buckets of chicken were placed in the walk in cooler to continue <br /> thawing. <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #30 Food Storage/Display Properly Labeled <br /> OBSERVATIONS:Observed a bag on onions being stored directly on the ground in the back dry storage area. Keep and <br /> maintain all food related products six inches above the ground at all times. Corrected on site. <br /> There is a bag of dried peppers open and not placed in a close-able container after use. Place all food related products, <br /> once open and if not used by the end of the day, into close-able containers to ensure an enclosed storage. Correct today. <br /> Observed meat containers inside of the walk in cooler that are lacking lids or covers. Provide a form of protection for all raw <br /> meat and food stored inside of walk in coolers, in the form of lids, plastic wrap covers or alternative approved sources. <br /> Correct immediately. <br /> CALCODE DESCRIPTION:Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br /> above the floor on approved shelving.
