Time In: 10:15 am <br /> Time Out: 10:50 am <br /> Food Program Complaint Inspection Report <br /> Name of Facility: EL TARASCO Date: 08/26/2019 <br /> Address: 0 LOWER SACRAMENTO RD,STOCKTON <br /> Owner/Operator: Telephone. <br /> Program Element: 1600 - FOOD PROGRAM Complaint#: C00050358 <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ALLEGES SHE ORDERED NACHOS FROM THIS TRUCK AND THE MEAT WAS OLD AND HARD, <br /> CHIPS WERE STALE AND SOUR CREAM WAS WARM. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS: Refrigerator is running at 41 F. Maintain at 41 F or lower at all times. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at orbelow 4V 45°F or at or above 135°F.(113996, 113998, <br /> 114037, 114343(a)) <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM --LOCATION --TEMP°F--COMMENTS <br /> asada meat--steam table-- 137.00°F sour cream--refrigerator--46.00° F <br /> NOTES <br /> Spoke to owner who was aware of this complaint. He stated that customer ordered carnitas nachos. Customer realized that <br /> carnitas were pork not beef and retured plate. Customer's order was replaced with asada nachos. Owner stated that meat is <br /> bought daily from Los Mescales Meat Mkt at the corner of Filbert and Fremont. Sour cream is bought from La Suprema (food <br /> delivered at Commisary from a refrigerated truck that comes from Oakland), and nachos are bought several times a week <br /> from Arandas Mkt.
