All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#11 Reheating Procedure for Hot Holding MAJOR <br />OBSERVATIONS: Steak on steam table was found at 125F. All cooked foods must be kept and maintained at 135F or <br />above. Corrected on site. <br />CALCODE DESCRIPTION: Any potentially hazardous foods cooked, cooled and subsequently reheated for hot holding or serving shall be <br />brought to a temperature of 165#F. (114014, 114016) <br />#6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: Hand washing sink is lacking paper towels Must have paper towels at all times during operation hours for <br />hand washing and drying. Correct by today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br />#7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: 2 Door M3 turbo air refrigerator was constandt at around 43F.
