All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#68 Lack of Proper Handwashing Sinks MAJOR <br />OBSERVATIONS: Hand sink is out of service due to plumbing issues. Issues shall be immediately repaired. <br />CALCODE DESCRIPTION: 1. The mobile food facility sells nonprepackaged food and there is no adequate handwashing sink or if the <br />hand sink is not separated from the warewashing sink. (§114311) 2. The provided handwashing sink is not at least 9" by 9" and 5" deep <br />and easily accessible to employees. [§114311(a)] 3. The handwashing sink is not separated from the warewashing sink by a metal <br />splashguard of adequate size and construction, unless the handwashing sink is separated from the warewashing sink by at least 24". [ <br />§114311(b)] 4. The mobile food facility is unenclosed, the sinks are not an integral part of the primary unit, nor are the sinks in an <br />immediately adjacent auxiliary conveyance containing all the utility connections. (§114314) <br />#69 Lack of Proper Warewashing Sinks MAJOR <br />OBSERVATIONS: Ware washing sink lacks running water. Plumbing issue shall be immediately repaired. Owner stated <br />that she is able to wash her utensils at EL GRULLITO RESTAURANT(a few feet away). For now wash-rinse-sanitize at this <br />facility. <br />CALCODE DESCRIPTION: 1. The mobile food facility cooks, blends or otherwise prepares nonprepackaged food and there is no <br />3-compartment warewashing sink with two integral drain boards available. [§114313(a)] 2. Where no warewashing sink is required, <br />equipment and utensils are not washed and sanitized daily at the approved commissary or food facility, or an adequate supply of spare <br />clean utensils is not provided. [§114313(b)] 3. The compartments of the sink are not at least 12 inches wide, 12 inches long and 10 <br />inches deep or large enough to accommodate the cleaning of the largest utensil. [1 §14313(aX1)] 4. The drain boards are not at least the <br />size of one of the sink compartments, are not installed with at least a 1/8 inch per foot slope toward the sink compartment, or are not <br />constructed with a minimum one-half inch lip or rim to prevent spillage. [1§14313(aX2)] <br />#1 Demonstration of Knowledge <br />OBSERVATIONS: Lack of food safety certificate. Certificate shall be available by 60 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination.
