All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of the food facility. #1 Demonstration of Knowledge OBSERVATIONS: Current operator on site does not possess a food safety certificate. Obtain a 5 -year food safety certificate or provide on to an associate and provide a copy to Victor Acevedo (vmacevedo@sjgov.org) within 60 days. CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their assigned duties. Replace and provide a new faucet that is able to reach all of the bison in the ware -washing sink. Correct within 30 days. The quick access door to the preparation cooler is unlatched and moves around when opening. Replace or repair to ensure all equipment on board mobile food unit is within good repair. Provide to ensure no leakage of any of the gray water during transport or during operation hours. Correct within 7 days. CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required by applicable plumbing codes.
