All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#1 Demonstration of Knowledge <br />OBSERVATIONS: Current operator on site does not possess a food safety certificate. Obtain a 5 -year food safety certificate <br />or provide on to an associate and provide a copy to Victor Acevedo (vmacevedo@sjgov.org) within 60 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non -prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br />#35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: The faucet is currently breaking apart and will eventually be too unstable to function properly. Replace <br />and provide a new faucet that is able to reach all of the bison in the ware -washing sink. Correct within 30 days. <br />The quick access door to the preparation cooler is unlatched and moves around when opening. Replace or repair to ensure <br />all equipment on board mobile food unit is within good repair. Correct within 14 days. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Provide to ensure no leakage of any of <br />the gray water during transport or during operation hours. Correct within 7 days. <br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required <br />by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br />ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair. Any hose <br />used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other purpose.
