(routine inspection on 6-16-20) <br />Ran the machine 1st time on light cycle - thermolabel did not indicate at 160F at tray. <br />Ran the machine 2nd time on heavy cycle - thermolabel did not indicate 160F at tray / digital display v. digital thermometer <br />temp at wash cycle 132F & 132F / digital display v. digital thermometer at rinse cycle 180F & 119F highest temp reached at <br />digital thermometer. <br />Ran the cycle 3rd time on heavy cycle - thermolabel did indicate 160F at tray / digital display v. digital thermometer temp at <br />wash cycle 135F & 135F / digital display v. digital thermometer at rinse cycle 188F & 146F. <br />OK to use tray washer. <br />Recommend keeping a daily log. Do not use the machine if thermolabel dot does not black out / manually warewashing shall <br />be conducted. <br />No signature obtained / COVID-19 <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
