Also provide owner's name, city, state, and zip code of a minimum 1 inch in <br /> height. <br /> 2.Provide vehicle registration, commissary letter, and insignia from the Housing and Urban <br /> Development (HUD). Their phone number is 916-255-2501 <br /> 3.Provide at time of inspection hot water of a minimum of 120 F, refrigerators shall be 41 F or <br /> lower, and food warmers a minimum of 135 F. Freezers shall also be on. <br /> 4.Floors shall be constructed of approved materials and shall be impervious, smooth, easily <br /> cleanable, and provide employee safety from slipping. The floor/wall juncture shall be coved <br /> with a minimum 3/8 inch radius and the floor surface shall extend up the wall at least 4 inches. <br /> (Vinyl rubber top set base is not acceptable material). Equipment shall be sealed to the floor <br /> or raised 6 inches off the floor by means of easily cleanable legs or feet. <br /> 5.Mechanical exhaust ventilation equipment shall be provided over all cooking equipment as <br /> required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors. All <br /> mechanical exhaust ventilation equipment shall be installed and maintained in accordance <br /> with the California Mechanical Code. Makeup air shall be provided the rate of that exhausted. <br /> The EHD must be kept informed of the construction progress. A final inspection must be <br /> performed, operating permit fees paid, and approval to operate granted prior to opening for <br /> business. All equipment must be installed and thorough cleaning completed prior to the final <br /> inspection. Inspections must be scheduled at least 48 hours in advance. Charges for <br /> additional inspections, re-inspections and/or consultations may be assessed at the EHD <br /> hourly rate of $152 per hour. <br /> 1868 E.
