Refill today. <br />Hand sink next to 3 comp sink is blocked with boxes. All sinks shall be fully accessible. Correct immediately. <br />Hand sink next to ovens is dirty and lacks hot water. Clean daily and repair hot water handle by 1 week. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Tall racks in walk in freezer lack covers. One cover is not clean. Cover tall racks with clean disposable <br />plastic bags or clean plastic covers. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: Several surfaces, exterior of food bins, storage racks, storage shelves, tall rack with wheels inside the 3 <br />door reach in cooler, the 1 tub food prep sink (mold), equipment and ect are not clean. All unsanitary items shall be detailed <br />cleaned. Do not forget to clean cooler's and freezers doors handles, daily. Clean everything by 2 weeks and as needed. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Saw several dirty towels at several locations. Store dirty linens in laundry basket/cleanable <br />container/laundry bag at all times. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3 (d-e)) <br /> #41 Plumbing Maintained; Approved Back Flow Device <br />OBSERVATIONS: Hand sink next to ice machine has poor water pressure. Increase by 2 days. <br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required <br />by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br />ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair. Any hose <br />used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other purpose.
