Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br /> OBSERVATIONS:While taking temperatures during my inspection, it was observed that the 3-compartment sink and the <br /> mop sink would reach a temperature of 115F for the hot water and no higher.The operator stated that the water heater is on <br /> the other side of the building,which was confirmed, so the water cools before it arrives to the sink. I advised to increase the <br /> temperature on the water heater to 125F or above. <br /> CALCODE DESCRIPTION:An adequate,protected,pressurized,potable supply of hot water and cold water shall be provided at all times. <br /> (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #23 Rodents, Insects or Animals Inside Facility MAJOR <br /> OBSERVATIONS:Observed multiple dead roaches throughout the facility. Owner stated that he has been using a new form <br /> of pest control and it has been working but the roaches crawl into the open before exterminated. I explained to check the <br /> entire facility for roaches that have been exterminated, remove and sanitize area. Continue implementing pest control. <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats,mice), cockroaches,flies.(114259.1, 114259.4, <br /> 114259.5) <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Operator or owner currently do not possess a food safety certificate on site. Obtain and provide a copy to <br /> Victor Acevedo(vmacevedo@sjgov.org)within 60 days. This is a repeat violation. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. Provide <br /> single use paper towels to ensure proper hand washing is being performed. Correct immediately. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair.
