Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:The current food safety certificate on site is currently expired. The owner contains multiple traps <br /> and stated that the facility has been monitored by a pest control company. The droppings appear old and no fresh droppings <br /> are observed. Continue implanting pest control, remove all droppings and sanitize back area throughly. Correct immediately. <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats,mice), cockroaches,flies.(114259.1, 114259.4, <br /> 114259.5) <br /> #36 Equipment/Utensils/Linens: Proper Storage/Use <br /> OBSERVATIONS:Observed carbon dioxide canisters not secured to a stationary object. Keep and maintain all carbon <br /> dioxide canisters secured at all times. Correct today. <br /> CALCODE DESCRIPTION:All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate from <br /> food and food-contact surfaces. (114185.3- 114185.4) Utensils and equipment shall be handled and stored so as to be protected from <br /> contamination. Keep and maintain all wiping clothes inside of the sanitizer bucket when not in use. Replace sanitizer <br /> bucket when needed. Correct today. <br /> CALCODE DESCRIPTION:Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer.
