Owner is not on site. Spoke to cashier about the complaint. We went outside
to the dumpster enclosure. There are two dumpsters in the enclosure. There is an odor in the dumpster enclosure area.
Facility has a meat department and stated that the meat scraps, cutting, trimming, bone, etc. is placed into the dumpsters until
the dumpsters are emptied (per employee 2x/week on Mondays and Thursdays).
Options for correction: OPTION 1: Place all meat scraps, trimmings, cutting, bone, etc. into a durable non-absorbent
container (like a covered trash can) and store the trimmings in the walk-in cooler until the day the dumpster is due to be
emptied. This will keep the trimmings cold, will not cause an odor issue and will not attract flies to the dumpster.
Option 2: Contract with a renderer (such as, but not limited to, Sacramento Rendering Company) to provide rendering service.
Spoke to the owner on the phone and discussed options for correction.
Correct today.
In addition: Remind all employees that face coverings shall be worn at all times.
Page 1 of 2EHD 16-23 Rev. 06/30/15 Food Program Complaint Inspection Report
FA0014943 CO0052374 SC004 08/04/2020
1868 E.
