New certificate shall be obtained by 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. Label, today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069 (b)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: Most of the cabinet shelves are lined with aluminum foil since they are absorbent. This is not allowed. <br />Absorbent surfaces shall be repaired by 1 month so that they are smooth, cleanable, and non absorbent. Either paint <br />absorbent wood or cover with any type of durable non absorbent material. <br />Several shelves are not clean. Clean them and maintain. Do not forget shelving underneath sinks. <br />Cabinet door under 3 comp sink falls off. Replace door hinge (s) by 2 weeks. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175).
