<br /> OBSERVATIONS:Mop sink compartment is totally blocked by dirty trays. Remove trays from mop sink compartment today
<br /> to be washed manually at the 3 comp sink.
<br /> I observe dirty utensils, placed in the rinsing, sanitizing compartments of the 3 comp sink and over the air dry drain board
<br /> on the right side). I observe clean utensils stored in a stand that is placed on the left side drain board (for dirty utensils).
<br /> Remove clean utensils from the left drain board and remove the dirty utensils from the rinsing and sanitizing compartments
<br /> today. Clean and sanitize compartments and drain boards of 3 comp sink today for proper manual utensils washing.
