Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The 3 door prep cooler in kitchen is not cold enough at 48 F. Put less towels at one time and make sure chlorine <br />level is at 100 ppm. <br />Utensils (metal bowls) for fried wings are washed at the end of the day. Wash-Rinse-Sanitize at least every 4 hours. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
