Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Operator currently does not contain a current food safety certificate on site at this time. Obtain and <br /> maintain on site at all times, provide a copy to Victor Acevedo(vmacevedo@sjgov.org)within 30 days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #6 Handwashing Facilities Supplied and Accessible <br /> OBSERVATIONS:Observed multiple empty recycling located inside of the hand washing sink, making it not easily <br /> accessible. Remove all items from hand washing sink, maintain stocked and ensure sink is easily accessible at all times. <br /> Corrected on site. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing,food preparation and the washing of <br /> utensils and equipment. (113953, 113953.1, 114067(17) <br /> #26 Approved Thawing Methods <br /> OBSERVATIONS:Observed a frozen stack of meat that appears to be thawing on the drain board of the preparation sink. <br /> Observe following thawing methods listed before in the CalCode description. Meat was placed under running cool water, <br /> corrected ons site. <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #34 Warewashing Facilites Maintained <br /> OBSERVATIONS:Facility currently lacks sanitizing strips at this time. Obtain and maintain on site to ensure proper <br /> sanitizing levels during ware-washing. Correct within 7 days. <br /> CALCODE DESCRIPTION:Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br /> materials shall be provided to measure the applicable sanitization method.
