Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: The delfield 1 door reach in behind the front counter is not cold enough at 49 F. The 1 door prep ref for <br />sandwich prep is not working at 80 F. Decrease and maintain these refrigerators at 41 F or lower today. Throw out all items <br />in the 1 door prep ref immediately. The chicken in the rear and lower area of the hot hold is not hot enough at 120-125 F. <br />Increase the holding temperature to 135 F or higher today (the hot hold oven is not working properly.) Throw out all chicken <br />under 130 F immediately. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. The paper towel dispenser is empty.
