REHS <br /> August 19, 2020 <br /> ATTN: Maria Teresa Gomez <br /> 4719 Quail lakes Drive #G278 <br /> Stockton, CA 95209 <br /> RE PROPOSED: YO MAMAS TACOS <br /> 4719 Quail Lakes Drive #G278 <br /> Stockton, CA 95209 <br /> Dear: Ms. Gomez <br /> This letter indicates San Joaquin County Environmental Health Department (EHD) approval of <br /> drawings submitted for the proposed YO MAMAS TACOS is subject to the following <br /> condition(s): <br /> 1.One side of the trailer shall be provided with business name with letters of a minimum 3 <br /> inches in height and owner's name, city, state and zip code of a minimum 1 inch in height. <br /> 2.Provide at time of inspection vehicle registration, commissary letter, and state insignia from <br /> the Housing and Urban Development department. <br /> 3.Provide at time of inspection hot water of a minimum of 120 F, refrigerators shall be 41 F or <br /> lower, and all food warmers shall be a minimum of 135 F or higher. Freezers shall also be on. <br /> 4.The floor surfaces in all food preparation or packaging areas, open food storage areas, <br /> utensil washing areas, refuse storage areas, janitorial areas, and all restroom and employee <br /> change areas, shall be smooth and of durable construction and nonabsorbent material which <br /> is easily cleaned. These floor surfaces shall be coved at the juncture at the floor and wall with <br /> a three-eighths (318) inch minimum radius coving and shall extend up the wall at least four (4) <br /> inches. Rubber or vinyl top set base is not permitted in these areas. <br /> The EHD must be kept informed of the construction progress. A final inspection must be <br /> performed, operating permit fees paid, and approval to operate granted prior to opening for <br /> business. All equipment must be installed and thorough cleaning completed prior to the final <br /> inspection. Inspections must be scheduled at least 48 hours in advance. Charges for <br /> 1868 E.
