COMPLAINT INSPECTION REPORT <br /> 3:39 pm <br /> 2:51 pm <br />Time Out: <br />Time In: <br />Environmental Health Department <br />Name of Facility: CARNICERIA LA SIERRA Date: 03/24/2021 <br />Address: 253 E ALPINE AVE, STOCKTON 95204 <br />Owner/Operator: VILLALOBOS, JAVIER & TERESA Telephone: (209) 932-0661 <br />Program Element: 1600 - FOOD PROGRAM Complaint #: CO0053585 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />COMPLAINANT IS CONCERNED THAT THE LIGHTER FLUID BEING USED TO START THE GRILL IS PERMEATING <br />THE MEAT ON THE GRILL AND IS GOING TO MAKE PEOPLE SICK. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />No Temperature Data Collected <br />FOOD ITEM -- LOCATION -- TEMP º F -- COMMENTS <br />NOTES <br />Complaint inspection. <br />Upon arrival, observed an individual cooking meat outside in the front of the facility on a grill that appears to be operating <br />using propane. I spoke to the individual in regards to the complaint and he stated that the facility only uses a propane <br />operated grill during the week but does use a grill with wood and coal for the weekend but this grill is located in the back of the <br />facility. I continued to ask if the individual uses lighter fluid and how much, according to the cook, lighter fluid is only used to <br />start the flames for the grill using wood and coal. Once the flame is stated the lighter fluid is put away and the flame is kept <br />alive using air and adding additional burning material. During this time the grill is free of any meat products and meat is only <br />added after the flames are fully controlled and the grill has been warmed for some time. After this all meat products are <br />transferred inside in order to finalize the preparation of the meat productsbefore being placed inside of a hot hold. The cook <br />stated that no lighter fluid is used while meat is being cooked and is only used to start the flame before being stored away. <br />Official inspection report emailed. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
