ACEVEDO <br />Upon arrival, observed an individual cooking meat outside in the front of the facility <br />on a grill that appears to be operating using propane. I spoke to the individual in <br />regards to the complaint and he stated that the facility only uses a propane <br />operated grill during the week but does use a grill with wood and coal for the <br />weekend but this grill is located in the back of the facility. I continued to ask if the <br />individual uses lighter fluid and how much, according to the cook, lighter fluid is <br />only used to start the flames for the grill using wood and coal. Once the flame is <br />stated the lighter fluid is put away and the flame is kept alive using air and adding <br />additional burning material. During this time the grill is free of any meat products <br />and meat is only added after the flames are fully controlled and the grill has been <br />warmed for some time. After this all meat products are transferred inside in order <br />to finalize the preparation of the meat products before being placed inside of a hot <br />hold.
