Per owner, he is actively working on <br />the issue of the refrigeration. We discussed that until the new equipment is received, the following corrective action shall be <br />taken daily: 1) maintain ice baths (do not allow ice to thoroughly melt), 2) only fill topping pans halfway, and 3) maintain time <br />and temperature logs for toppings. Food temperatures shall be taken several times a shift. When the temperature reaches <br />50F, the product shall be discarded within 4 hours.
