Church St. <br /> Stockton, CA 95203 <br /> <br /> <br />Dear Mr. Richardson: <br /> <br />This letter indicates San Joaquin County Environmental Health Department (EHD) approval of <br />drawings submitted for the proposed Gospel Center Rescue Mission, subject to the following <br />condition(s): <br /> <br />1. All manufactured and custom-made food service equipment must be certified for <br />sanitation by an American National Standards Institute (ANSI) accredited <br />certification program. All proposed equipment is subject to EHD approval [CRFC <br />§114130]. <br /> <br />2. Provide sufficient natural or artificial lighting to produce the following light intensity: <br />a.) Fifty (50) foot candles, as measured thirty (30) inches off the floor, in any room in <br />which food is prepared, manufactured, processed, or packaged. b.) Twenty (20) <br />foot candles where food is self served, stored in refrigerators, or at dry storage, <br />handwashing, warewashing, equipment and utensil storage areas, and toilet rooms. <br />c.) Ten (10) foot candles at walk-in refrigeration units or dry storage area [CRFC <br />§114252]. <br /> <br /> <br />3. Provide enclosed light fixtures, or shatterproof shields for light fixtures, over all <br />areas where food is prepared, utensils cleaned, or open food is stored [CRFC <br />§114252.1]. <br /> <br />4. Provide well fitting, self-closing doors to all toilet rooms [CRFC §114276]. <br /> <br /> <br />5. All displays for unpackaged food must be shielded so as to intercept a direct line <br />between the customer's mouth and the food. The display should meet the EHD <br />guidelines for self-service buffets [CRFC §114060].
