See official inspection report. <br />Upon arrival, I was able to speak with the operator on site in regards to the nature <br />of the complaint. The operator stated that normal ware-washing of the cooking <br />equipment and any other disposable liquids are what go down into the sink of the <br />facility. The operator presented a grease trap located outside of the facility, <br />towards the rear in which he states all his large amount of grease is disposed of <br />properly. He also presented the location of his underground grease trap <br />man-covers, in which he states is cleaned out as much as necessary during <br />operation of the facility.
