Hunter St. <br /> Stockton, CA 95202 <br /> Dear Mr. Galvan: <br /> This letter indicates San Joaquin County Environmental Health Department (EHD) approval of <br /> drawings submitted for the proposed F.E.D, subject to the following condition(s): <br /> 1. All displays for unpackaged food must be shielded so as to intercept a direct line <br /> between the customer's mouth and the food. [CRFC §114060]. <br /> 2. The potable water supply shall be protected with a backflow or back siphonage <br /> protection device, when required by applicable plumbing codes. [CRFC §114192, <br /> §114193 and §114193.1]. <br /> 3. Provide well fitting, self-closing doors to all toilet rooms [CRFC §114276]. <br /> 4. Provide enclosed light fixtures, or shatterproof shields for light fixtures, over all areas <br /> where food is prepared, utensils cleaned, or open food is stored [CRFC §114252.1]. <br /> 5. The handwashing and food preparation sinks shall be separated from the ware- <br /> washing sink or food preparation / storage areas by a metal splash guard, if separation <br /> is less than twenty-four (24) inches. Splash guard shall be at least six (6) inches in <br /> height from back edge to front edge [CRFC §113953]. <br /> 6. All manufactured and custom-made food service equipment must be certified for <br /> sanitation by an American National Standards Institute (ANSI) accredited certification <br /> program. All proposed equipment is subject to EHD approval [CRFC §114130]. <br /> 7. Provide sufficient natural or artificial lighting to produce the following light intensity: a.) <br /> Fifty (50) foot candles, as measured thirty (30) inches off the floor, in any room in which <br /> 1868 E.
