Called General MANZO <br />Hospital, spoke with Tasha, who reported that a complainant at 209-688-1240 <br />reported that Little Caesars on Willson way is not putting pizzas in hot holding after <br />they have been prepared. Researched the site location, couldn't locate a Little <br />Caesars on Willson way. Reviewed food code. Per 113996.(a) "Except during <br />preparation, cooking, cooling, transportation to or from a retail food facility for a <br />period of less than 30 minutes, or when time is used as the public health control <br />as specified under Section 114000, or as otherwise provided in this section, <br />potentially hazardous food shall be maintained at or above 135°F, or at or below <br />41°F." <br />Called the complainant, who reported that they are a door dasher and were waiting <br />at the facility for the pick up and 4-5 pizzas were put on the counter after they were <br />backed and were not put in hot holding for ale lease 10-15 minutes. The <br />complainant indicated that they spoke with facility manager and ware notified that <br />facility is allowed to keep pizzas out without hot holding for some time and they are <br />very busy and understaffed. Confirmed the facility location, it's on Charter Way <br />and not on Wilson Way. The complainant is concerned about food safety <br />procedures. Let the complainant know that per food code they are allowed to not <br />put pizzas into hot holding for up to 30 minutes. Researched CERS and Envision <br />for facility contact information. Called 209-941-0141 (listed in Envision), wrong <br />number. Called 209-595-3854, asked to speak with the manager, spoke with <br />Bianca Hernandez a manager of several years at this location. Bianca reported <br />that she recalled the incident with a disgruntled customer that was unhappy that <br />they had to wait too long for their pizza. According to Bianca Hernandez, facility's <br />policy is to have pizza's outsize the warmer for up to 30 minutes after which time if <br />they are not picked up they are discarded. Bianca checked all 4 warmers, they are <br />all working with the following temperatures: 156F, 155F, 160F, and 165F. <br />Called facility contact Tim Duncan (209) 595-3854, let him know that we received <br />an anonymous complaint, conveyed the nature of the complaint, Tim verified their <br />30 minute hot holding policy and directed me to Johnny, the site supervisor, <br />209-269-7727, if I had any additional questions. Called and left a message <br />regarding complaint details with Johnny.
